Chicken and Rice Casserole

  • 1 cup water
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • Dash of parsley
  • 2 tablespoons red wine
  • 3/4 cup white long grained rice
  • 2 pounds chicken breasts or thighs
  • 1 envelope dry Lipton onion soup mix

Directions:

Mix water, soups, parsley, wine, and rice. Put rice mixture in greased casserole dish. Lay chicken, skin side up, on top of rice then sprinkle with onion soup mix.

Cover with foil and bake at 350° for about 1 hour, or until chicken is done and rice is tender. Let stand for 10 minutes.

Serves 6.
