Southwestern Chopped Salad

  • 8 Chicken Tenders or Rotisserie Chicken torn into small pieces
  • 1 Head Butter Lettuce (Comes in plastic bubble)
  • 3 Large Carrots
  • 2 Medium Tomatoes
  • 1/3 cup coarsely chopped Red Onion
  • 8-oz can Beans (black or red kidney or pinto)
  • 1/3 cup Trader Joe's Corn and Chile Tomato-Less Salsa
  • 1 Avocado
  • 1 Lime
  • Corn Chips or Taco Chips

Directions:

  1. Prepare chicken tenders or use rotisserie chicken.
  2. Wash and dry butter lettuce. Tear lettuce into bite size pieces into large bowl.
  3. Peel carrots and cut into coin slices. Place into small microwave-safe dish and cook on high for 2 minutes.
  4. Halve the tomatoes and squeeze juice out then chop into small pieces.
  5. Drain beans and add to bowl. Cool carrots and add to bowl too. Add corn salsa and lightly toss. Cut avocado into wedges and squeeze lime juice to cover.

Place salad mixture on plate, decorate plate with avocado slices and add chips as you please. Enjoy!
